“CORCHIFRITO”, THE BEST TAPA IN SPAIN
Edible cork? This is the brilliant idea that came to the chef Emilio Martín Moquedano from Valladolid, winner of the first prize in the 2020 City of Valladolid Pinchos and Tapas Competition with his original “Corchifito”
The tapa, a trick of the eye of undeniable visual impact, perfectly simulates a wine cork, prepared using fried potato filled with shredded suckling pig, in particular homage to the traditional Sevillian “Cochifrito”.
The “Corchifrito” is served screwed into its corresponding bottle, and the diner has to extract it with a laminate opener. The realism is so surprising that it is even served fire-branded with the appropriate vintage.
When he received the prize, Martín explained that he was inspired by a Ribera del Duero cork stopper, and that his aim was to “allude to the wineries we have around us”. The chef, who runs the kitchen at the Suite 22 restaurant, decided to donate the 10,000 euros of the prize to the soup kitchens of Valladolid, so that nobody “would be left behind” during the pandemic.
